Our expectations from the role
  • Set up station properly and on time for each service period; ensure required mis en place is ready on time.
  • Monitor stock movement and be responsible for ordering for your section.
  • Communicate actively within the department.
  • Ensure all food is prepared according to recipes designated by the Sous Chef / Chef de Cuisine.
  • Report any change in food quality in preparation to CDP / Sous Chef.
  • Maintain knowledge of products; dishes are maintained and communicated to all involved personnel.
  • Be able to work in other areas when needed and participate in cross-training when directed.
  • Share culinary skills and recipes with junior chefs and apprentices.
  • Adhere to new menu/dishes and regulations as directed by the chef de cuisine / sous chef.
  • Minimize overproduction and food waste to reduce costs.
  • Report deficiencies in maintenance, kitchen equipment, or food quality to the chef de partie / sous chef immediately.
  • In the absence of the Chef de Partie, take over responsibilities as needed.
  • Adhere to environmental policies and programs; comply with food handling and sanitation standards.
  • Collaborate with the Chef de Partie on monthly hygiene audit challenges.
  • Proper storage of food; FIFO (first in, first out).
  • Ensure standards and procedures are in place and followed; temperature control; dating and labeling of food items; receiving of food; decoration made from food; Overtime approved on business demands by the Sous Chef/Chef de Cuisine; adherence to grooming standards.
  • Report any violations of rules for disciplinary action.
Position summary

Prepare special meals or substitute items; regulate temperatures of ovens, broilers, grills and roasters; thaw items from freezer; ensure proper portioning and garnishes; maintain food logs; monitor quality and quantity of food; communicate assistance needed during busy periods; inform Chef of excess items for daily specials; inform F&B staff of menu specials and out-of-stock items; ensure quality of food items; prepare and cook according to recipes, quality, presentation standards and checklists; prepare cold foods.
