To prepare food items in any section of the kitchen assigned by the Sous Chef according to standard recipes at the highest quality level.
Responsibilities:
- Run the day-to-day operation of the assigned kitchen section.
- Ensure that mise-en-place is prepared for the shift's needs.
- Ensure sanitation standards as set forth by Rosewood Abu Dhabi and local authorities.
- Assist in maintenance and cleanliness of all food preparation equipment.
- Ensure a safe working environment.
- Follow control systems to ensure quality and portion control.
- Store items properly at the end of the shift.
- Maintain a clean, neat, and organized work area.
- Handle and report any accidents immediately, no matter how minor.
- Respond appropriately in any hotel emergency or safety situation.
- Perform other tasks or projects as assigned by hotel management.
Qualifications:
- Experience: Minimum four years of culinary/kitchen experience in an international environment. Experience in a wok is essential. Full knowledge of cooking and presentation for all departments in this kitchen. Knowledge of sanitation requirements in food handling.
- Education: High school diploma; culinary certification preferred.
- General Skills: Attention to detail, speed, and accuracy; ability to prioritize, organize, and follow-up; clear thinking, calmness, and good judgment in problem-solving; thorough understanding of guest service needs; teamwork skills; ability to work with minimal supervision; confidentiality awareness.
Technical Skills:
- Extensive knowledge of local and international cuisines.
- Exceptional guest relations and associate relations skills.
- Strong organizational skills and computer proficiency.
- Understanding of financial reports including labor costs.
- Leadership ability to manage all kitchen facets and lead a team.
- Flexibility with work schedules.
- Excellent presentation, written, and verbal communication skills.
- Active listening skills.
Language:
Fluency in English required; additional languages preferred.
Physical Requirements:
Ability to exert physical effort, endure movements across work areas, reach, remain stationary at times, and effectively communicate with guests and colleagues.
