Job description

Based at the Mandarin Oriental Downtown, Dubai within the Food & Beverage Kitchen, Butchery section in Dubai, the Demi Chef de Partie is responsible for the meticulous preparation, portioning, and presentation of meats, poultry, and seafood in accordance with our menus, ensuring the highest quality and food safety standards are consistently upheld. Demi Chef de Partie reports to Chef de Partie.

As a Demi Chef de Partie, you will be responsible for the following duties:

  • Assist the Chef de Partie in cutting, trimming, deboning, and portioning of meat, poultry, and seafood to meet menu requirements and portion control standards.
  • Ensure proper labelling, handling, and storage of all butchery products to maintain freshness, minimize waste, and maximize quality.
  • Prepare mise en place for the butchery section efficiently and in accordance with kitchen demands.
  • Work collaboratively with other kitchen sections to ensure smooth kitchen operations.
  • Uphold and comply with all health, food safety, and hygiene standards in line with hotel policies, HACCP requirements, including those mandated by UAE Municipality.

As a Demi Chef de Partie, we expect from you:

  • High school diploma or equivalent; formal culinary training is an advantage.
  • Minimum of 2 years experience as a Demi Chef de Partie or similar role in a 5-star hotel or high-end standalone restaurant.
  • Proven experience in handling a variety of meats, poultry, and seafood with expert technique.
  • International work experience in at least two of the following regions: Asia, Europe, North America; Middle East experience is highly desirable.
  • Proven understanding of HACCP and food safety practices.
  • Hotel pre-opening or renovation experience is highly desirable.
  • Strong work ethic, precision, and attention to detail are essential.
