OUR EXPECTATIONS FROM THE ROLE:

  • Proper setup of station and timely preparation of mise en place for each service period.
  • Monitor stock levels and be responsible for ordering within your section.
  • Participate actively in departmental communications.
  • Prepare food according to recipes provided by the Sous Chef or Chef de Cuisine.
  • Report any changes in food quality to the CDP or Sous Chef.
  • Maintain knowledge of products and dishes, and communicate effectively with team members.
  • Be flexible to work in other areas and participate in cross-training.
  • Contribute to training junior chefs and apprentices by sharing culinary skills and recipes.
  • Implement new menus, dishes, and regulations as directed by superiors.
  • Minimize overproduction and food waste to control costs.
  • Report maintenance issues and ensure equipment functionality and food quality standards.
  • Take over responsibilities of the Chef de Partie when needed.
  • Adhere to environmental policies and food safety standards.
  • Ensure proper storage, FIFO, temperature control, and labeling of food items.
  • Maintain cleanliness and sanitation of the kitchen.
  • Overtime may be approved based on business needs.
  • Follow all rules and standards; violations may result in disciplinary actions.

POSITION SUMMARY

Prepare special meals or substitute items, regulate oven and grill temperatures, ensure proper portioning and garnishing, maintain food logs, monitor food quality, and communicate with team members. Assist in managing food stocks and ensure adherence to quality and presentation standards. Prepare cold foods and ensure all food safety and sanitation procedures are followed.
