Qualifications

Responsibilities

  • Organisieren Sie zusammen mit dem Chef de Partie den Schichtablauf in seiner/ihrer Abteilung.
  • Überwachen Sie die Commis Chefs in Bezug auf persönliche Hygiene und Abteilungsaufgaben.

Job Description
  • Organize, together with the Chef de Partie, the shift in his/her section regarding mise-en-place, production, and service.
  • Take orders from the Chef de Partie and execute them correctly.
  • Assist the Chef de Partie in writing daily wine, dry store, food requisitions, and kitchen transfers on the appropriate forms for approval by the Executive Sous Chef & Chef de Cuisine to ensure high stock rotation.
  • Maintain good employee relations and motivate colleagues.
  • Follow specifications received from the Chef de Partie regarding portion size, quantity, and quality as per the recipe index.
  • Complete daily checklists related to mise-en-place and food storage.
  • Attend daily and monthly meetings with the Chef de Cuisine and other relevant meetings as requested by the Executive Chef / Executive Sous Chef and/or Chef de Cuisine.
  • Report machinery and small equipment failures to the Chef de Cuisine and follow up on necessary repairs.
  • Check the main information board for updates on Banquets or other organizational information.
  • Keep the section clean and tidy.
  • Pass all relevant information to the next shift.
  • Prepare for functions with proper mise-en-place and ensure night coverage.
  • Record accidents and sickness in the logbook and report to the Executive Sous Chef & Chef de Cuisine.
  • Supervise Commis Chefs regarding personal hygiene and section responsibilities.
  • Assist the Chef de Cuisine in developing new recipes and menu ideas.
  • Understand and adhere to the company's policies on fire safety, hygiene, and safety.

Qualifications
  • At least 2 years of experience as a Commis or similar role.
  • Strong communication skills in verbal, listening, and writing.
  • Innovative, proactive, and reliable.
  • Ability to work under pressure and in a multicultural environment.
  • Cost awareness.
  • Basic Food and Hygiene training certification.
  • Computer skills are a plus.
  • Ability to communicate effectively in English.
  • Culinary training or apprenticeship certification.
