POSITION SUMMARY

Prepare special meals or substitute items. Regulate temperature of ovens, broilers, grills, and roasters. Thaw food from freezer storage in the refrigerator. Ensure proper portioning and food garnishing. Maintain food logs. Monitor the quality and quantity of prepared food. Communicate assistance needed during busy periods. Inform the Chef of excess food items for use in daily specials. Notify Food & Beverage staff of menu specials and out-of-stock items. Ensure the quality of food items. Prepare and cook food according to recipes, quality standards, presentation standards, and checklists. Prepare cold foods.

OUR EXPECTATIONS FROM THE ROLE:
  • Ensure the quality of food items; notify management if standards are not met.
  • Communicate needs during busy periods to ensure optimal service.
  • Monitor food preparation quantities and portions to control waste and maintain quality.
  • Check and maintain the proper operation of appliances and food safety temperatures.
  • Operate kitchen equipment such as ovens, stoves, grills, microwaves, and fryers.
  • Report maintenance issues promptly.
  • Inform the Chef of excess food for use in specials or other purposes.
  • Maintain food logs and production charts.
  • Keep the kitchen area sanitary, including cleaning and disinfecting all surfaces and equipment.
  • Set up and break down work stations with necessary tools and supplies, ensuring standards are met.
  • Follow sanitation, cleaning, and pest control procedures.
  • Prepare and cook food according to recipes, standards, and checklists, prioritizing tasks.
  • Test cooked foods for doneness using tasting, smelling, or piercing methods.
  • Accurately measure and prepare ingredients.
  • Prepare ingredients for cooking, including portioning and storing.
  • Monitor food quality throughout preparation and service, utilizing HACCP forms and charts.
  • Prepare fruits and vegetables for cooking or consumption.
  • Assist and support kitchen staff as needed.
  • Prepare special meals or substitutions for guest requests.
  • Supervise and coordinate activities of kitchen staff involved in food prep.
  • Determine presentation styles and create decorative displays.
