Job summary

Rotana in Abu Dhabi seeks a passionate Commis II to join our kitchen team. You will assist in daily food preparation and support higher-level chefs, ensuring hygiene and consistency across the kitchen.

You will follow menu specifications, manage mise-en-place, monitor stock and costs, and collaborate with other sections to deliver exceptional guest experiences in a multicultural environment.

Qualifications

• Professional kitchen apprenticeship or chefs training course.
• Experience in quality establishments with good culinary skills.
• Ability to communicate in English and preserve knowledge of food prep.

Responsibilities

• Support the Demi Chef de Partie or Commis I in the daily operation and work.
• Follow menu specifications by the Chef de Partie.
• Keep work area hygienic and comply with hotel rules.
• Control food stock and food cost in your section.
• Prepare daily mis-en-place and food production in main kitchen or satellites.
• Follow instructions from superiors to complete daily tasks.
• Maintain high standards and stay updated on new products and techniques.
• Coordinate with other sections to manage requirements, cleanliness, wastage and cost control.

As a Commis II you are responsible for the daily food preparation and duties assigned to meet the set standard and qualities whereby your role will include key responsibilities such as:

• Support the Demi Chef de Partie or Commis I in the daily operation and work
• Work according to the menu specifications by the Chef de Partie
• Keep work area at all times in hygienic conditions according to the rules set by the hotel
• Control food stock and food cost in his section
• Prepare the daily mis-en-place and food production in different sections of the main kitchen or satellites
• Follow the instructions and recommendations from the immediate Superiors to complete the daily tasks
• Ensure the highest standards and consistent quality in the daily preparation and keep up to date with the new products, recipes and preparation techniques
• Coordinate and participate with other sections of requirements, cleanliness, wastage and cost control

Education, Qualifications & Experiences

You should have a professional kitchen apprenticeship or chefs training course and previouse xperiences in quality establishments along with good culinary skills. The ability to communicate in English and a proven track of food preparation, presentation and preservation knowledge is an essential.
