Commis I Baker
- Assists Chef de Partie with mise en place production service and daily checklists for food storage.
- Follows recipes and specifications for portion size quantity and quality as per the recipe index.
- Writes daily requisitions and kitchen transfers for approval by Executive Chef/Sous Chef to maintain high stock rotation.
- Attends daily meetings and checks information boards for updates on banquets and organisational changes.
- Maintains hygiene standards and HACCP records in accordance with regulations and hotel procedures.
- Reports equipment issues to Chef de Partie and ensures proper follow-up.
- Communicates effectively with team members and maintains good working relationships.
- Prepares a variety of baked goods including bread, pastries, cakes, and desserts according to established recipes and standards.
- Monitors baking times and temperatures to ensure consistent quality of products.
- Assists in the decoration and presentation of baked goods for display and service.
- Maintains cleanliness and organisation of the bakery area including workstations, ovens, and storage areas.
- Participates in inventory management including stock rotation and proper storage of ingredients and finished products.
Qualifications:
- Completed kitchen apprentice or chef's training with at least 1-2 years experience in a five-star international chain hotel.
- Thorough understanding of baking techniques, methods, and recipe interpretation.
- Excellent communication skills in English and ability to work collaboratively in a team.
- Knowledge of food safety and hygiene standards including HACCP principles.
- Ability to work effectively in a fast-paced environment with flexibility for varying shifts.
- Keen attention to detail and commitment to producing high-quality baked goods.
- Willingness to learn and adapt to new techniques and recipes.
