Job Requirements
  • Review daily production sheets with chef de partie or sous chef when the first is not present.
  • Prepare and delegate the production of necessary food items in accordance with standards, ensuring timely and efficient service to guests.
  • Participate actively in training junior talent and apprentices in culinary skills.
  • Adhere to standardized recipes and specifications to maintain consistency and meet all standards.
  • Keep work station clean and organized, including refrigerators, freezers, countertops, and stove tops.
  • Ensure station opening and closing procedures are carried out to standard.
  • Minimize over-production and food waste; ensure proper rotation, labeling, and storing of food to reduce costs.
  • Operate all kitchen equipment safely and conduct operations with safety in mind at all times.
  • Handle, store, prepare, and serve all food products safely, following hotel and government food safety guidelines.
  • Report deficiencies in kitchen equipment or food quality promptly to the chef de partie or sous chef.
  • Comply with safety regulations and participate actively in the hotel health and safety program.
  • Follow environmental policies and programs as required.
  • Perform other reasonable duties as assigned.
  • Log all relevant information in the kitchen log book.
  • Participate in briefings about new updates and follow-ups.
  • Monitor deliveries and coordinate arrangements accordingly.
  • Follow cleaning schedules diligently.
  • Conduct line checks consistently.
  • Ensure the kitchen log book is filled out properly.
  • Manage the section confidently and with a sense of urgency.
Specific Job Knowledge, Skills, and Abilities

Proficiency in writing and speaking English is required.

Education

Postgraduate and basic Apprenticeship.

Experience

Minimum of 1-2 years in a similar position within a high-volume, internationally recognized luxury hotel chain or food and beverage establishment.
