Job Requirements
  • Review the daily production sheets with the chef de partie or sous chef when the first is not present.
  • Prepare and delegate the production of necessary food items in accordance with standards in a timely and efficient manner to ensure no interruption to guest service.
  • Actively participate in training junior talent and apprentices in culinary skills.
  • Adhere to standardized recipes and specifications to maintain consistency and meet all standards.
  • Keep work stations clean and organized, including refrigerators, freezers, countertops, and stove tops.
  • Ensure station opening and closing procedures are carried out to standard.
  • Minimize overproduction and food waste; ensure proper rotation, labeling, and storage of food to reduce food costs.
  • Operate all kitchen equipment safely at all times.
  • Handle, store, prepare, and serve food safely, following hotel and government food safety guidelines.
  • Report deficiencies in kitchen equipment or food quality promptly to the chef de partie or sous chef.
  • Comply with safety regulations and participate actively in the hotel’s health and safety program.
  • Follow environmental policies and programs as required.
  • Perform other reasonable duties as assigned.
  • Log all relevant information in the kitchen log book.
  • Brief talent on new updates and follow up accordingly.
  • Monitor deliveries and delegate arrangements as needed.
  • Follow cleaning schedules.
  • Perform line checks regularly.
  • Maintain accurate entries in the kitchen log book.
  • Run the section confidently and with a sense of urgency.
Specific Job Knowledge, Skills, and Abilities

Must be proficient in reading, writing, and speaking English.

Education

Postgraduate education and basic apprenticeship.

Experience

Minimum of 1-2 years in a similar position within a high-volume, internationally recognized luxury hotel chain or food and beverage establishment.

Experience in Mediterranean cuisine is preferred.
