Job summary

The Lana Dubai is seeking a Commis 1 - Butchery in the Food & Beverage - Kitchen team. This permanent, full-time role offers the opportunity to learn from our award-winning academy and contribute to high‑quality meat preparation for our luxury hotels in the Dorchester Collection.

You’ll gain hands-on experience in cutting, trimming, and preparing various meats, while embracing our values and delivering exceptional guest experiences in a renowned setting.

Qualifications

• English is the primary language used in our hotel.
• Additional languages such as Hindi Dutch/Afrikaans & Arabic are welcomed.

Responsibilities

• Assist in the preparation and processing of meats according to hotel standards and recipes to ensure the best guest experience.
• Cut, trim and prepare beef, poultry and seafood as required.
• Adhere to hygiene and safety regulations; maintain inventory and cleanliness of the butchery area; support Head Butcher and assist in creating menu items.
• Bring passion and creativity to deliver high quality ingredients for the hotel's culinary offerings.

What you’ll do

You’ll love what you do and take pride in delighting our guests:

• You will be responsible for assisting in the preparation and processing of meats according to the hotels standards and recipes to ensure our guests receive nothing but the best experience.
• This role involves cutting trimming and preparing various types of meats (such as beef poultry and seafood).
• Youll also be required to the adherence of hygiene and safety regulations maintenance of inventory and ensuring the cleanliness of the butchery area. The Commis 1 Butcher works under the supervision of the Head Butcher and may also assist in creating menu items. This role demands precision skill in using butchery tools and a commitment to delivering high-quality ingredients for the hotels culinary offerings

• The Commis 1 role values expertise in sausage making smoking of products and charcuterie. These skills are highly desirable although on-the-job training will also be provided.
