Job summary

NH Collection Dubai The Palm is seeking a Commis Chef to join our kitchen team. You will prepare and cook food items according to approved recipes, maintain mise-en-place, and support the Chef de Partie during service.

The role requires knowledge of cooking techniques, food hygiene, and the ability to work in a fast-paced environment. Flexibility for shifts, weekends, and holidays is essential.

Qualifications

• Previous experience as a Commis Chef, preferably within a 4- or 5-star hotel or quality restaurant.
• Culinary qualification or relevant professional training is preferred.
• Basic to good knowledge of food preparation and cooking techniques.
• Knowledge of food hygiene and safety standards.
• Good teamwork and communication skills.
• Ability to work efficiently in a fast-paced kitchen environment.
• Flexible to work shifts, weekends, and public holidays.
• Passion for culinary excellence and willingness to learn and develop.

Responsibilities

• Prepare and cook food items according to approved recipes, portion sizes, and presentation standards.
• Ensure daily mise-en-place is prepared and ready before service.
• Support the Chef de Partie in the smooth operation of the assigned kitchen section.
• Maintain consistent food quality, taste, freshness, and presentation.
• Follow food safety, hygiene, HACCP, and sanitation standards at all times.
• Ensure proper storage, labeling, rotation, and handling of food products following FIFO procedures.
• Minimize food waste and assist in maintaining appropriate stock levels.
• Keep the workstation, kitchen equipment, and surrounding areas clean and organized.
• Report any equipment defects, food quality concerns, or shortages to the Chef de Partie.
• Assist other kitchen sections during busy periods when required.
• Follow all NH Collection and Minor Hotels policies, procedures, and brand standards.
