Job summary

NH Collection Dubai The Palm is seeking a Commis 2 to support the culinary team in preparing and producing high-quality dishes. You will learn under the Chef de Partie and senior chefs while maintaining top hygiene standards in a fast-paced luxury hotel environment.

Responsibilities include mise-en-place, assisting with cooking and plating, proper food storage, and adherence to HACCP. Flexibility for shifts and holidays is required as part of a dynamic kitchen crew.

Qualifications

• Previous culinary experience in a hotel, restaurant, or hospitality setting.
• Culinary qualification or relevant training is an advantage.
• Basic knowledge of food preparation and cooking techniques.
• Basic understanding of food hygiene and safety practices.
• Willingness to learn and develop culinary skills.
• Good teamwork and communication skills.
• Ability to work in a fast-paced environment.
• Flexible to work shifts, weekends, and public holidays.

Responsibilities

• Assist in preparing ingredients and food items according to approved recipes and standards.
• Complete daily mise-en-place requirements for the assigned kitchen section.
• Assist senior chefs with cooking, plating, and food preparation during service.
• Ensure food products are properly stored, labeled, and rotated according to FIFO procedures.
• Maintain cleanliness and organization of workstations, equipment, and kitchen areas.
• Follow HACCP, food safety, hygiene, and sanitation standards at all times.
• Assist in controlling food waste and use ingredients responsibly.
• Check the freshness and quality of ingredients before use and report any concerns.
• Handle kitchen equipment and utensils safely and correctly.
• Support other kitchen sections during busy periods when required.
• Follow instructions from the Chef de Partie and senior culinary team.
• Comply with all NH Collection and Minor Hotels policies, procedures, and brand standards.
