About the job

Based at the Mandarin Oriental Downtown, Dubai within the Pastry section in Dubai, the Chef de Partie is responsible to work alongside the Pastry Chef and deliver high-quality pastries, desserts, and confections, ensuring all creations meet the standards of our discerning clientele. Chef De Partie will also assist in managing the kitchen operations for events, ensuring a smooth and efficient service. Chef de Partie reports to the Pastry Chef.

As a Chef de Partie, you will be responsible for the following duties:

  • Take full responsibility for the quality, authenticity, and presentation of dishes, ensuring they align with Pastry Chef standards and plating guides.
  • Supervise the assigned kitchen section and collaborate effectively with other sections to ensure smooth operations.
  • Monitor food preparation and timely dish delivery, ensuring adherence to quality, hygiene, and presentation standards.
  • Maintain accurate and up-to-date plating guides, ensuring consistent execution of dish descriptions and techniques.
  • Manage daily ingredient requests and stock, supporting proper inventory control and efficient kitchen operations.
  • Uphold all food safety standards in compliance with Mandarin Oriental Hotel Group policies and UAE regulations.

As a Chef de Partie, we expect from you:

  • High school qualification is required; a degree or diploma in Hospitality or Culinary Arts is preferred.
  • At least 3 years of experience in a 5-star hotel or upscale restaurant, particularly in high-volume, service-focused settings.
  • Valuable international exposure across at least two of the following regions: Asia, Europe, North America, or the Middle East.
  • Experience with hotel pre-openings or renovations is considered an asset.
  • Proven expertise in cooking, plating, and presenting dishes to luxury dining standards.
  • Strong understanding of HACCP guidelines and food safety practices, ensuring strict hygiene and compliance.
