Job summary

Atlantis, The Palm in Dubai seeks a Chef de Cuisine, Banquets, to lead the hotel’s banquet kitchen to the highest standards, overseeing hygiene, stock levels, and inter–department coordination while ensuring food cost targets and the kitchen’s P&L. You will direct, motivate, and train staff to uphold service excellence.

A Diploma in Catering and 8–10 years in a 5-star international hotel with 2–3 years in a management role are required, along with strong HACCP knowledge and safety discipline.

Qualifications

• Diploma in Catering or similar is required.
• 8-10 years’ experience in a 5-star international chain/hotel.
• Minimum 2-3 years’ experience in a management role (CDC or similar).
• Strong knowledge of HACCP and general health & safety in the workplace.
• Experience in big volume hotels or large banquet operations preferred.

Responsibilities

• Manage and organize the restaurant kitchen to the highest standards per SOPs.
• Ensure proper hygiene and sanitation in the workplace and maintain stock levels.
• Oversee kitchen P&L and overall food cost targets.
• Direct, supervise and motivate staff to deliver peak service quality.
• Communicate with guests and relay feedback to the chef in charge and management.

About The Role

As a Chef de Cuisine, Banquets – you will manage and organize all the requirements of the restaurant kitchen to the highest standards in accordance with the standard operating procedures. You will ensure proper hygiene and sanitation in the workplace under your jurisdiction, adequate stocks of working materials, inter–department coordination and training. You will also carry full responsibility for the operating equipment, including its inventory levels, and maintain the resort food cost at all times as well as managing other business necessities such as the kitchen’s P&L. You must ensure and enforce the set service standard procedures by directing, supervising, and motivating staff to perform to their highest level of service. You will also communicate with the guests and share feedback with the chef in charge and the management. The feedback then will ensure high levels of food and service quality, and guest satisfaction is always maintained. About You

The ideal candidate must have a Diploma in Catering or similar and have 8-10 years’ experience in a 5-star international chain/hotel, whilst having a minimum of 2-3 years’ experience in a management role, such as a CDC or similar. The right candidate must have a comprehensive knowledge of HACCP as well as general health & safety in the workplace. Ideally candidate has experience in big volume hotels or was part of big banquet operations.
