Job summary

Le Royal Méridien Abu Dhabi's Market Kitchen is seeking a seasoned Chef De Cuisine to lead the farm-to-table concept in a modern American dining setting.

You will steer kitchen operations, craft innovative grill-inspired menus, recruit and develop the culinary team, and ensure UAE HACCP compliance while delivering exceptional guest experiences.

Fluency in English is required, additional languages are a plus; this role offers a premium environment within a luxury hotel.

Qualifications

• Minimum 2 years of proven experience as Chef De Cuisine or Head Chef leading a high-end operation.
• Minimum 6-8 years of progressive culinary leadership experience within luxury hotels, fine dining restaurants, or renowned international restaurant groups.

Responsibilities

• Lead and oversee all kitchen operations, ensuring the highest standards of food preparation, presentation, hygiene, and consistency.
• Develop and execute grill-themed menus, seasonal promotions, and signature dishes while maintaining the restaurant's identity as a premier dining destination.
• Manage all culinary staffing requirements, including recruitment, training, performance management, succession planning, and team development.
• Maintain full compliance with UAE food safety regulations, HACCP standards, sanitation procedures, and company policies.
• Foster a culture of excellence, accountability, teamwork, and continuous improvement throughout the culinary brigade.
• Excellent command of English; additional languages are advantageous.

• Handle guest feedback professionally and proactively, ensuring service recovery where required and continuously improving the overall dining experience.
