Job Description

Responsible for daily bar operations and staff supervision. The role involves promoting the bar, menu planning, maintaining standards, assisting servers during peak times, managing liquor inventories, and ensuring guest and employee satisfaction while adhering to the budget. Enforces legal obligations and identifies training needs to improve performance. Supports the food and beverage team by assisting in other outlets as needed.

Managing Bar Operation

  • Supervise and coordinate daily operations and staff, ensuring prompt and courteous service.
  • Maintain a large whiskey collection and assist in procurement.
  • Implement beverage policies and ensure compliance with legal regulations.
  • Manage beverage control including inventory, portion control, costs, and sales analysis.
  • Participate in group meetings to understand needs.
  • Maintain quality standards and guest service excellence.
  • Ensure the bar’s visual appeal, cleanliness, and ambiance.
  • Collaborate with culinary and service teams to promote teamwork.
  • Understand budgets, financial reports, and payroll.
  • Maintain high staff morale and team spirit.
  • Recruit, schedule, and ensure adequate staffing.
  • Establish and uphold 5-star service standards.
  • Control beverage quality and service metrics.
  • Conduct staff training, promotions, and performance reviews.
  • Participate in service as needed and generate revenue through promotions.
  • Coordinate with management to ensure standards and maintenance.
  • Prepare budgets and oversee reservations and events.
  • Attend meetings and ensure daily operational checks.
  • Maintain staff timesheets and daily sales reports.
  • Ensure high-quality service and cleanliness standards.
  • Adhere to Accor’s Code of Ethics and perform other duties as assigned.

Ensuring Exceptional Customer Service

  • Deliver excellent customer service and gather feedback.
  • Handle guest complaints effectively.
  • Empower staff to provide outstanding service.
  • Focus on guest satisfaction and continuous improvement.
  • Review guest feedback with staff to improve service.

Communication and Conduct

  • Maintain friendly, service-oriented interactions.
  • Communicate critical information clearly.
  • Attend all relevant meetings and maintain good attendance.
  • Ensure clear communication within the team.
  • Assist staff and be hands-on when needed.

Health and Safety

  • Ensure a safe environment for guests and staff.
  • Follow health, safety, and environmental protocols.
  • Maintain hygiene standards and grooming.
  • Report suspicious activities.
  • Assist with hygiene audits.

Stock Management

  • Conduct accurate stock takes.
  • Plan and control stock levels.
  • Store stock correctly according to food safety standards.

Training and Development

  • Coach and develop staff.
  • Train staff on liquor policies and whiskey tasting.
  • Manage training schedules and performance appraisals.
  • Create training initiatives and ensure staff development.

Sustainability and Stock

  • Minimize wastage and use seasonal ingredients.
  • Control daily stock levels to meet service needs.

Qualifications

  • Fluent in English; second language is a plus.
  • International experience is advantageous.
  • At least 3 years of management experience in a luxury hotel or related field.
  • Proficient in MS Office and hotel management systems.
  • Analytical, flexible, physically fit, and excellent leadership and communication skills.
  • Ability to handle multiple tasks in a dynamic environment and maintain professionalism under pressure.
