Job Purpose
As an Assistant Commissary Manager, you will oversee daily operations at the Commissary Centre, ensuring food products are produced to the highest quality and safety standards and delivered on time to our restaurants. This role directly impacts branch revenue and is key to managing budgets, maintaining quality protocols, developing teams, and ensuring full food safety compliance. You will collaborate with QA, Operations, Finance, Warehouse, and Purchasing, while also engaging external stakeholders such as suppliers, vendors, and municipalities. Reporting to the Commissary Manager, this role supports operational excellence and regulatory alignment. Join our team and help deliver top-quality food products across the region.
Key Responsibilities
- Supervise and manage day-to-day food production to ensure compliance with standardized quality and safety protocols
- Conduct product testing and maintain consistency with franchisor specifications and internal standards
- Control production levels to prevent underproduction / overproduction and reduce waste
- Manage production supervisors and ensure efficient food processing workflows
- Evaluate raw materials and ensure FIFO principles and proper storage are followed
- Participate in new product development and standardize recipes in coordination with franchisors
- Set and enforce standards for raw material procurement, storage, and hygiene compliance
- Ensure all facilities, assets, and equipment are maintained, efficient, and cost-effective
- Lead food safety team; implement and maintain ISO 22000:2018 food safety management systems
- Handle recipe compliance, distribution issues, and equipment-related challenges
- Take corrective actions for any deviations from food safety or quality standards
- Maintain official documentation for municipal audits and inspections
- Conduct internal food safety audits aligned with YUM! Brands and ISO requirements
- Ensure restaurant supply routes are well-organized and timely
- Monitor internal auditing systems, customer feedback, and municipality inspection results
What We’re Looking For
Education & Experience
- Bachelor’s degree in Veterinary Medicine, Microbiology, Agriculture, or Food Technology
- Minimum 5 years’ experience in food production, quality assurance, or commissary operations
- ISO 22000:2018 and ISO 9001:2015 certified lead auditor
Technical Skills
- Deep understanding of food safety systems (ISO 22000, FSSC), Codex Alimentarius, HACCP
- Strong knowledge of food production standards, inventory, stock control, and sanitation protocols
- Familiarity with food fraud and food defense best practices
- Microsoft Office proficiency
