POSITION PURPOSE

The Manager, Risk Management is responsible for promoting the highest standards of Food Safety and Health & Safety awareness within the hotel, ensuring compliance with local laws and company standards.

They must be capable of effectively training staff on Marriott International and legal requirements.

ESSENTIAL FUNCTIONS

Food Safety

  • Ensure compliance with food safety policies such as FIFO, dating, labeling, cleaning, and storage organization across all food-related areas, escalating challenges as needed.
  • Monitor kitchen logs for BSA compliance and maintain updated knowledge of Food Safety Programs and legal standards.
  • Assist in creating formats and records to meet BSA and legal requirements.
  • Support food safety initiatives and perform other duties as assigned by management.
  • Report food safety issues and guest complaints, maintaining proper records.
  • Lead the development of a HACCP-based Food Safety Management System, ensuring continuous improvement.
  • Conduct risk assessments, take corrective actions, and organize departmental meetings.
  • Lead HACCP team meetings, highlight challenges, and promote a food safety culture.
  • Oversee contributions from Engineering’s HACCP team and monitor staff health issues.
  • Ensure sick staff do not handle food, inspect supplier hygiene standards, and follow personal hygiene procedures.
  • Conduct regular food safety inspections and liaise with external agencies on food safety matters.
  • Maintain records related to FSMS and related activities.
  • Attend and summarize departmental meetings, providing feedback on hygiene issues.

Health & Safety and Risk Management

  • Inform staff about workplace hazards and collaborate with management to develop risk management programs.
  • Implement policies to eliminate or minimize risks, and manage risk/loss prevention initiatives.
  • Raise awareness through regular safety simulations and training.

JOB KNOWLEDGE, SKILLS AND ABILITIES

  • Minimum 2 years of experience in a similar role.
  • Knowledge of UAE health & safety laws.
  • Strong customer service orientation, team spirit, and interpersonal skills.
  • Potential for leadership development, with self-confidence and enthusiasm.
  • Impeccable grooming and communication skills.
  • Knowledge of hotel IT systems.

QUALIFICATION STANDARDS

  • Effective communication skills, operational guideline adherence, analytical skills, and cultural adaptability.

EDUCATION
