Job description

Job title: Trainee Bakery Manager - Stellenbosch

Responsibilities:

  • Manage resources to maximize turnover and minimize shortage, ensuring adherence to standards, processes, and policies.
  • Conduct regular quality checks on merchandise and handle products as per SOP.
  • Ensure products are produced according to recipe specifications and that the department is ready for trade by store opening time.
  • Identify fast selling lines within the store and implications on margin and sales opportunities.
  • Ensure product is wrapped and packed according to standards and that compliance with hygiene, housekeeping, and safe working standards is maintained.
  • Monitor the implementation of all promotional activities and adhere to the promotional calendar.
  • Ensure back up areas are kept clean and clear, and follow sell by dates while rotating stock as per policy/SOP.
  • Maintain department merchandising and cleanliness standards, keeping waste to a minimum.

Food Safety & Hygiene:

  • Ensure hygiene and housekeeping standards are maintained and stock rotation is followed.
  • Monitor adherence to food safety and health and safety standards.
  • Implement cleaning schedules and check effective cleaning and sanitation.
  • Record Food Safety Daily Checklist.

Customer Services Management:

  • Respond to customer requests and answer queries on out of stock items, assisting with replacement products and explaining delivery timelines.
  • Ensure department standards are maintained and equipment is manned and in working order.

Staff Management:

  • Communicate critical information to staff and set targets and activities.
  • Handle procedural, policy, and legislative noncompliance.
  • Attend monthly regional meetings, relay information back to staff, and respond to queries on turnover and waste.
  • Check and amend Kronos scheduling and coach staff.

Administration:

  • Ensure all equipment is properly maintained and general maintenance standards are met.
  • Monitor waste and ensure procedures are adhered to.
  • Monitor turnover, identify opportunities for increasing turnover, and address barriers to achieving budgets.
  • Ensure all SEL is current and legible for customers.

Systems:

  • Conduct gap scanning for out of stocks and identify, count, and record out of stocks and over stocks.
  • Draw excel reports from SAP and communicate stock concerns to Demand Planning.
  • Action reduced to clear on SAP as per SOP.
  • Check electronic communications regularly during the working day and process waste.
  • Ensure PID’s are counted correctly as per the National P & L schedule.
