POSITION : Permanent

COMMENCEMENT : ASAP

PURPOSE OF POSITION :

This upmarket Japanese restaurant is looking for a Sushi Chef to work alongside the Head Chef to manage food stock and handle a wide range of ingredients, with attention to detail to fulfill quality standards.

MINIMUM REQUIREMENTS :

• Matric
• Culinary Diploma (preferred)
• Must have experience with Japanese cuisine
• Preferably + / - 4 years previous experience in a senior chef role
• Good knowledge of various sushi types and sushi-rolling techniques
• Own transport with valid driver's license
• Basic computer skills (Word, Excel, Outlook)
• Availability to work within opening hours (e.g., evenings, public holidays, weekends)
• Outstanding communication skills (verbal and written), fluent in English

KEY PERFORMANCE AREAS :

• Creating and preparing a rich sushi menu with various main ingredients and raw fish (e.g., salmon, tuna, unagi)
• Prepare appetizers, soups, and salads aligned with Japanese cuisine philosophy
• Manage and lead kitchen staff in the head chef's absence
• Coordinate with wait staff to ensure proper cooking, considering special requests and food allergies
• Provide guidance and training to junior kitchen staff, including line cooking, food preparation, and dish plating
• Supervise all food preparation and presentation to ensure quality and standards
• Oversee kitchen stock and ingredients, including proper dating and quality assurance
• Improve waste reduction and manage budgetary concerns
• Work with the head chef to maintain kitchen organization, staff skills, and training opportunities
• Monitor and maintain hygiene, health, and safety standards
