Position: Sushi Production

Responsible for the production of sushi within the department.

Minimum Qualifications:
  • Grade 12
  • Experience in cutting and filleting fish, with demonstrated ability in all key responsibilities
  • Proven skill in preparing all fish-related products
  • Broad knowledge of fish
  • Ability to accept responsibility for product preparation, display, promotion, and development
  • Maintain hygiene and housekeeping standards by storing products safely and tidily
  • Prepare and wrap products according to specifications
  • Ensure correct pricing, quality control, stock rotation, and removal of expired stock
Key Responsibilities:
Production
  • Follow production plan to ensure sales growth and minimize waste
  • Produce sushi recipes according to the plan
  • Maintain a clean work environment at all times
Sales, Turnover, Gross Margin
  • Prepare promotional lines in collaboration with the Sushi Chef
Administration
  • Assist with monthly stocktakes
  • Conduct daily waste scanning
Food Safety
  • Adhere to food safety procedures
  • Maintain hygiene standards
  • Maintain cold chain at all times
  • Prevent cross-contamination in the department
Self-Management
  • Drive and model Pick n Pay values at all levels
  • Stay updated with legislation and developments
  • Take ownership and demonstrate effective self-management
  • Maintain a positive attitude and respond openly to feedback
