Job summary

Kendrick Recruitment is seeking a passionate Sous Chef for a luxury game reserve in the Eastern Cape. This remote, five-star hospitality environment offers a live-in role and challenging opportunities to deliver exceptional dining experiences.

You will work closely with the Executive Chef, assisting kitchen operations, ensuring consistency and quality across all menus, and leading staff during service while maintaining top hygiene standards.

Qualifications

• Proven experience as a Sous Chef in luxury lodge or five-star hospitality.
• Strong culinary skills with attention to detail and presentation.
• Ability to work effectively under pressure in a remote environment.
• Excellent teamwork and communication skills.
• Strong understanding of kitchen hygiene and food safety standards.
• Passion for hospitality and guest experiences.
• Ability to lead the kitchen in the Executive Chef's absence.

Responsibilities

• Assist the Executive Chef with the overall management of the kitchen.
• Ensure consistent preparation and presentation of high-quality dishes.
• Supervise and support kitchen staff during service.
• Maintain high standards of hygiene, cleanliness, and food safety.
• Assist with menu planning and seasonal dish development.
• Ensure effective stock control, ordering, and ingredient rotation.
• Monitor portion control and minimise waste.
• Ensure all dietary requirements and guest preferences are met accurately.
• Support the training and development of junior kitchen staff.
• Maintain smooth kitchen operations during service periods.
• Ensure all food leaving the kitchen meets the property’s standards.
