Job description

Fancourt, South Africa’s premier golfing, leisure and lifestyle destination, is situated in George in the heart of the Garden Route.

We are now accepting applications for a Sous Chef – someone who will assist with managing and controlling our culinary areas within the F&B department, including Food Production, Food Service, Catering Event Planning, and Back of House.

You will also have to provide a unique 5

  • product offering in all hotel outlets and restaurants, aligned with changing guest dining trends through continuous product development, while maintaining cost-effective food production standards and operational efficiencies.

The ideal candidate will have good interpersonal skills, and can communicate comfortably and engagingly with colleagues, superiors, and guests. The position requires a 3-year Chefs Diploma from an internationally recognized institution with at least 6 years’ culinary experience, including 3 years as a Sous Chef in a 5-star hotel or resort environment.

  • Previous banqueting experience, computer literacy in MS Office, working knowledge of SAP, and financial management awareness are essential.

Duties include, but are not limited to:

  • Keeping abreast of trends in the culinary industry;
  • Developing and analyzing recipes to assign prices to menu items based on food, labor, and overhead costs;
  • Designing special product offerings to maximize stock usage and utilize slow-moving stock;
  • Coordinating planning, budgeting, or purchasing for all food operations to ensure efficiency;
  • Monitoring and controlling resources and assisting in overseeing spending;
  • Providing guidance, training, coaching, mentoring, and setting performance standards for subordinates;
  • Ensuring SHEQ & FCS requirements are met in each kitchen division.

We seek candidates willing to work weekends, public holidays, and shifts, and who are physically fit to perform the role's responsibilities.
