Job Description

Scope of Position: To supervise and ensure smooth food production in the assigned area and section, assist the Executive Sous Chef and Executive Chef in creating customer satisfaction by providing high-quality food, supervise kitchen service, solve problems, and maintain all kitchen areas to Fairmont standards.

Management Processes: Ensure excellent food production and quality, supervise daily food production, ensure culinary standards, assist in creating kitchen standards, control food production levels, and ensure hygiene and safety compliance.

Communication and Conduct: Approach all encounters with guests and employees in a friendly, service-oriented manner, maintain attendance, communicate clearly, assist chefs as needed, and perform other duties as required.

Food Quality and Control: Assist in menu planning, maintain recipe accuracy, ensure high standard plating, and avoid wastage.

Health and Safety: Maintain a hygienic kitchen, follow safety protocols, ensure employee grooming, and assist with hygiene audits.

Stock Management: Conduct stock takes, manage stock levels, store ingredients properly, and control wastage.

Training and Development: Coach and develop staff, supervise training, promote skill development, and ensure online training completion.

Sustainability and Stock: Use ingredients seasonally, minimize single-use plastics, and follow environmental programs.

Qualifications

Fluent in English, second language is an asset. Matric and registered level 3 Culinary Diploma. International experience advantageous. Minimum 4 years management experience in a luxury hotel kitchen or related field. Computer literate. Strong leadership, communication, and guest service skills. Physically fit and flexible in working hours. Ability to handle a dynamic environment and solve problems effectively.
