Service Supervisor
- Ensure consistency in services and products offered.
- Monitor staff and patron activities to ensure compliance with liquor regulations.
- Perform beverage preparation and service tasks, including presentation, sales, and training, ensuring profit margins are met.
- Assist in developing and implementing specialty drinks, including welcome, morning, and evening drinks.
- Promote communication between the Kitchen and Service teams, including daily meetings and pass management.
- Investigate guest complaints as required.
- The primary focus is Guest Service, with stock control and financials being crucial duties.
- Estimate consumption based on forecasts and schedule beverage and equipment orders, checking delivery quality and quantity.
- Maintain par levels for crockery, cutlery, and glassware.
- Review beverage menus, analyze recipes, determine costs, and set menu prices.
- Maintain inventory records for beverage and service equipment.
- Manage POS effectively, using reports to identify popular and profitable items.
- Coordinate equipment maintenance and repairs, including refrigeration and ice machines.
Sommelier
- Wine Knowledge: Have comprehensive understanding of wines, including types, taste profiles, food pairings, grape varieties, regions, and wine-making processes. Stay updated on industry trends.
- Customer Service: Assist customers in selecting wines, make recommendations, and provide excellent service to enhance dining experiences.
- Wine Presentation: Present, uncork, and pour wine professionally; explain origin, taste, and pairing to guests; keep wine lists updated.
- Inventory Management: Assist in managing wine inventory, including ordering, stock rotation, and minimizing wastage.
- Teamwork: Collaborate with culinary and service staff to ensure smooth operations and menu adjustments.
- Education and Training: Engage in ongoing learning and share knowledge with staff to improve wine service quality.
REQUIREMENTS - QUALIFICATIONS AND SKILLS
- Minimum of Cape Wine Academy 2-year diploma.
- Grade 12 and qualification in Travel and Tourism (advantageous).
- At least 1 year of relevant experience.
- Valid Driver's License.
- Knowledge of TallOrder (advantage).
- Experience in luxury F&B customer service.
- Knowledge of local, regional, and international wines and beverages.
- Understanding of food, cooking methods, and supply chain.
- Stock procedures and control knowledge.
- Operation of appliances and equipment.
- Hygiene and cleaning products knowledge.
- Basic planning, budgeting, and administrative skills.
