Hospitality and Outdoor is seeking an experienced Senior Sous Chef for a luxury lodge in the North West. This chef opportunity is ideal for a hospitality professional with strong kitchen leadership experience in a 4/5-star lodge environment. The candidate will support the Head Chef, oversee kitchen operations, and maintain culinary, hygiene, presentation, and standards.

Start date October 2026. Location: North West. Establishment: Game Lodge.

Qualifications

• 3+ years as Sous Chef or Head Chef in a 4/5-star lodge environment.
• Experience with menu compilation and implementation.
• Coordinate kitchen team to produce menus with attention to detail and presentation.
• Stock ordering, stock control, portion control, stock rotation, and staff rostering.
• Knowledge of dietary requirements and guest needs.
• Experience creating and maintaining written control documents and training manuals.
• Strong budgeting and departmental administration knowledge.
• Maintain hygienic kitchen and health & safety standards.
• Lead and develop junior kitchen staff.
• Provide shift handovers and guest requests.

The candidate will support the Head Chef, oversee kitchen operations, and maintain culinary, hygiene, presentation, and standards. This is an excellent opportunity for an experienced lodge chef ready to progress in a hospitality operation.

Job Requirements – Senior Chef & Kitchen

• Minimum 3 years’ previous Sous Chef or Head Chef experience in a 4/5-star lodge environment – Essential.
• Cooking and hygiene qualifications will be beneficial.
• Experience with menu compilation and implementation.
• Ability to coordinate the kitchen team to produce menus and food items with attention to detail and presentation.
• Experience with stock ordering, stock control, portion control, stock rotation, and staff rostering.
• Knowledge of all dietary requirements and the ability to accommodate guest needs.
• Experience creating, implementing, and maintaining written control documents and training manuals.
• Strong knowledge of planning, budgeting, and departmental administration.
• Ability to maintain a hygienic kitchen, follow health and safety standards, support recycling, and minimise equipment breakages.
• Strong leadership skills with a passion for developing junior kitchen staff and maintaining culinary standards.
• Ability to provide shift handovers, including responsibilities and guest requests.
