Job description

Restaurant Manager who will be responsible for the efficient operation and profitability of the Restaurant as well as In-Room Dining and the Pool Terrace at the Lodges & Spa.

The Restaurant Manager will work closely with the Food & Beverage Manager and Head Chef.

REQUIREMENTS:

  • Grade 12 tertiary qualification in Food Services Management / Hospitality
  • 3 years previous Restaurant Manager experience in 5 star or luxury establishments
  • Wine certification course or similar experience alignment
  • Previous Gourmet Guide and Eat Out aligned fine dining experience preferential
  • Excellent interpersonal and communication skills both written and verbal
  • Comfortable in dealing with very distinguished clientele
  • Excellent food and wine knowledge
  • Excellent ability to pay attention to detail
  • High stress tolerance and ability to work under pressure
  • Excellent planning and organizing skills
  • Reliable, flexible, adaptable & self-disciplined
  • High standards of ethical conduct

ROLE:

  • Coordinate daily operations of full portfolio
  • Deliver superior service and maximize guest satisfaction
  • Engage efficiently and accurately to guests' needs and complaints
  • Work alongside Sommelier compiling the wine & beverage list and recommending wine to guests
  • Ensure wine lists in rooms are updated
  • Staff recruitment & effective management (including rosters and overtime)
  • Responsible for stock purchasing, managing stock budget and flow, and working according to the budget
  • Ensure compliance with sanitation and safety regulations
