Role Purpose: To oversee the milk receiving, processing, and manufacturing processes.
Key Responsibilities:
- Ensure that production lines run smoothly with minimal downtime, adhering to business requirements to positively influence yoghurt manufacturing.
- Control the process of making high-quality yoghurt base, including mixing, pasteurization, inoculation, fermenting, cooling, and supply to machines, with proper documentation.
- Monitor utilities such as water, steam, electricity, ice water, and air.
- Manage fat and protein losses within budget, utilizing protein solver accurately for all batches.
- Maintain accurate primary documentation to support production processes.
- Work with MMS / BPCS & GMP Mass Balance systems.
- Collaborate with the Analytical Lab to produce accurate Fat & Protein results, utilizing FT1 & Food Scan instruments.
- Control processing equipment maintenance schedules.
- Ensure bulk base losses stay within scrap factor limits.
- Adhere to FSSC Food Safety standards.
- Manage CIP procedures, validations, verifications, and related documentation.
- Have knowledge of SCADA and PLC systems.
- Participate in internal and external audits, including FSSC, Raw Milk, GMR, and GMP-Mass Balance audits.
- Lead troubleshooting efforts, generate Non-Conformances, and implement Corrective actions.
- Adapt to business requirements and changes to enhance yoghurt manufacturing.
Requirements:
- Matric Qualification
- Dairy Manufacturing qualification
- National Diploma / Equivalent in Biotechnology, Food Science (advantageous)
- Minimum 3 years in manufacturing, preferably processing
- Experience in FMCG environment
- Computer literacy
- Good communication skills
- Team player
