Job summary

Wild Dreams Hospitality in Cape Town is seeking a composed Junior Sous Chef to join a four-strong brigade. You’ll step in to run the kitchen when the Head Chef is away, in an open-plan setting where guest interaction is key.

You should have proven junior sous experience in 4- and 5-star venues, lead calmly under pressure, and maintain pristine hygiene while delivering high 5-star standards for guests.

Qualifications

• Proven experience as a Junior Sous Chef in 4- or 5-star venues.
• Ability to lead the kitchen in the Head Chef's absence.
• Strong guest interaction skills suited to an open-plan kitchen.
• Calm, professional presence during service and in view of guests.

Responsibilities

• Support the Head Chef with daily kitchen operations.
• Prepare and present dishes to high 5-star standards.
• Lead the kitchen and make decisions when the Head Chef is away.
• Guide and support the kitchen team during service.
• Engage with guests in an open-plan kitchen with warmth.
• Maintain hygiene, food safety, and cleanliness standards.
• Assist with stock control and ordering as required.

You will work within a close-knit brigade of four chefs and step in to run the kitchen when the Head Chef is away. The kitchen is open plan, so this role suits a composed, articulate chef who is as comfortable talking to guests as they are on the pass.

Core Criteria:

• Proven experience as a Junior Sous Chef or similar role in 4 and 5-star establishments
• Ability to confidently lead the kitchen in the Head Chef's absence
• Well-spoken, with strong guest interaction skills suited to an open-plan kitchen
• Calm, professional presence when cooking in full view of guests
• Reliable and adaptable team player within a small brigade of four chefs

Core Responsibilities:

• Support the Head Chef with the daily running of the kitchen

• Lead the kitchen and make operational decisions when the Head Chef is away
• Guide and support the kitchen team during service
