Are you a dynamic and experienced leader with a passion for exceptional food, outstanding customer service, and seamless restaurant operations? A renowned name in the specialty coffee and hospitality industry is looking for a Halaal Restaurant Manager to join their team! In this role, you’ll oversee kitchen operations, stock control, and menu execution while ensuring the highest standards of service in a fast-paced, customer-centric environment. Strong GAAP knowledge is essential, along with the ability to lead a team effectively and uphold operational excellence.

Minimum Requirements :

  1. Minimum of 2 years' experience as a General Manager in a Halaal restaurant environment.
  2. Extensive knowledge and experience using the GAAP system, including advanced reporting and back-office functionality.
  3. Proven experience in stock management, including stock-taking, movement, and monitoring item usage and pricing.
  4. In-depth coffee knowledge with Level 3 barista skills, including milk foaming, shot pulling, and slip management.
  5. Strong understanding of restaurant operations, including kitchen management, menu preparation, and recipe execution.
  6. Experience in ordering procedures for kitchen, bar, and daily operational needs (e.g., bread, cakes, and fresh produce).
  7. Excellent leadership and team management skills, including staff scheduling, cross-training, and maintaining efficiency during shifts.
  8. Proficient in customer service, handling complaints, and building loyalty with regular patrons.
  9. Ability to ensure smooth day-to-day operations, address unforeseen challenges, and maintain high standards of service.
  10. Strong communication skills to maintain professional relationships with suppliers and team members.
  11. Knowledge of rostering and managing wage bills relative to turnover.
  12. Demonstrated ability to multitask, problem-solve, and prioritize effectively in a fast-paced environment.

Duties and Responsibilities :

  1. Full menu knowledge, including all main menu items, tapas, limited menu items, coffees, teas, cocktails, wines, smoothies, milkshakes, and other beverages.
  2. Full coffee knowledge, with Level 3 barista and bar training in all areas – including milk foaming, shot pulling, and slip management.
  3. Detailed knowledge of the company’s roots and all aspects of its involvement and work in the coffee industry, including the sourcing of beans, food products, and alcoholic beverages.
  4. Comprehensive understanding of kitchen operations, including the preparation of all recipes, prep items, and menu items.
  5. Capability to prepare all recipes, prep, and menu items with the assistance of a recipe book.
  6. Advanced ordering procedures, including daily bread orders, cake orders, fruit & vegetable orders, bar orders, and kitchen orders.
  7. Strong knowledge of stock movement and item usage, with special attention to price increases and quality inconsistencies.
  8. Ability to maintain a good working relationship with suppliers.
  9. Advanced GAAP knowledge, including capturing invoices, pulling management overview reports, conducting daily stock-takes, and performing daily cash-up procedures.
  10. Ensuring the smooth running of the restaurant and addressing operational issues efficiently.
  11. Supervising staff on shift, ensuring duties are completed efficiently and correctly, while maintaining high customer satisfaction.
  12. Performing or delegating duties of any staff member in case of short-staffing or unforeseen circumstances.
  13. Cross-training staff to ensure flexibility in addressing operational needs.
  14. Complete knowledge of rostering and monitoring wage bills versus turnover.
  15. Engaging in customer interaction at all levels, including handling complaints, monitoring regulars, and building customer loyalty.
