The Role

As a Food and Beverage Manager, you will be responsible for overseeing the overall operation of the Food and Beverage department, ensuring high standards of service, safety, and quality across all food and beverage outlets. You will lead and inspire the team, working closely with the executive team to achieve operational goals and maintain a premium guest experience.

What's in a Day's Work

  • Develop policies, processes, and standards to ensure effective, high-quality Food and Beverage service is consistently provided to guests.
  • Implement processes to understand and meet the Food and Beverage needs and expectations of guests.
  • Ensure that any Food and Beverage requests from guests are promptly addressed and resolved.
  • Provide direction, oversight, and guidance to the Food and Beverage teams, ensuring cohesive operations across the department.
  • Collaborate with senior Food and Beverage leaders, housekeeping, and stewarding departments to establish effective par stock levels for utensils, chinaware, glassware, flatware, hollowware, cutlery, table linen, and other necessary items.
  • Develop and execute the annual plan and activities for the Food and Beverage departments, aligning with organizational goals.
  • Assist the Human Resources function in attracting, selecting, and hiring suitable employees for the Food and Beverage department.
  • Ensure the proper selection of suppliers in collaboration with the Purchasing function.
  • Oversee the development and implementation of security, health, and safety policies, ensuring compliance with local legislation and regulations.
  • Develop a key control system to safeguard Food and Beverage areas, equipment, and supplies.
  • Facilitate communication and collaboration among the Food and Beverage leadership teams across the organization.
  • Build and maintain effective relationships with Food and Beverage suppliers.
  • Monitor and evaluate the performance of contractors providing services to the Food and Beverage function.
  • Stay updated with the latest trends, equipment, and innovations in the Food and Beverage industry.
  • Work with the housekeeping function to implement and monitor an effective pest control system for Food and Beverage areas.
  • Ensure Food and Beverage employees receive ongoing training in food safety, service standards, and operational procedures.
  • Develop, implement, and review standard recipes for all beverage items to ensure consistent product quality.
  • Develop and communicate service sequences to ensure consistent, excellent service delivery.
  • Support the quality team in developing and maintaining Food and Beverage policies and standards across the organization.
  • Prepare regular performance reports for management detailing the status of the Food and Beverage department and comparing it to targets.
  • Lead the Food and Beverage leadership team by setting a clear vision, role modeling hotel values, and fostering effective communication.
  • Take responsibility for developing the leadership and professional competence of the Food and Beverage executive team.
  • Ensure that all team members are meeting performance indicators and targets set for their roles.
  • Ensure regular performance feedback is provided to senior Food and Beverage leaders with documented development plans in place.
  • Coordinate with HR to conduct disciplinary discussions with underperforming team members when retraining and coaching have not yielded the desired results.
  • Lead efforts to maintain awareness and compliance with health, safety, and security regulations across the Food and Beverage departments.
  • Work closely with the quality team to ensure Food and Beverage policies are clearly documented, communicated, and adhered to.
  • Prepare the annual Food and Beverage budget, including purchasing needs for furniture, fixtures, equipment, and staffing.
  • Collaborate with the Executive Chef and Purchasing team to develop guidelines for food and beverage stock levels.
  • Recommend and manage Food and Beverage CAPEX purchases as part of the budgeting process.
  • Manage Food and Beverage expenses, including payroll, equipment, and supplies, to ensure the department stays within its budget.
  • Work with finance to develop stock control systems and stocktaking procedures to improve financial performance.
  • Ensure that Food and Beverage systems, processes, and practices adhere to security, safety, and food safety standards.
  • Coordinate with the maintenance team to ensure that repairs and preventive maintenance for Food and Beverage areas are performed efficiently.
  • Monitor Food and Beverage systems to prevent damage to property, equipment, and furniture.

Requirements :

Note : This opportunity is open to South African Citizens only. No work permits available.

  • Diploma in Hotel Management, Food and Beverage, or a related field.
  • Minimum of 5 years experience in a luxury Food and Beverage management role, ideally in a 5-star hotel environment.
  • Strong leadership skills with the ability to motivate and manage diverse teams.
  • Excellent financial acumen, including budgeting and cost control.
  • In-depth knowledge of food and beverage trends and industry best practices.
  • Fluent in English; additional language skills are advantageous.
  • Proficient in Microsoft Office and food & beverage management software.
