Our client in the Hospitality and Tourism Industry, based in a Addo, is currently looking to employ a Food and Beverage Manager.
Requirements:
- Matric (Grade 12) with Hospitality, Tourism or Consumer Studies preferred.
- Diploma or Degree in Hospitality/Food and Beverage Management.
- Minimum 5 years of experience in a 4 or 5-star lodge/hotel/resort environment.
- At least 2 years of experience in a management/supervisory role.
- Sound knowledge of food and beverage operations, stock control, menu planning, and costing.
- Experience managing F&B across lodge restaurants, bush events, bar services, and in-room dining.
- Strong financial and budgeting skills.
- Computer literate – MS Office (Word, Excel, Outlook); experience with POS systems (e.g., Micros, Pilot) and stock systems (e.g., Gaap, Apex, Innkeeper).
- Strong leadership, communication, and interpersonal skills.
- Understanding of guest expectations in a luxury lodge setting.
- Valid driver’s license.
Responsibilities:
- Oversee all food and beverage operations across the reserve, including lodge dining, bar services, and special events (bush dinners, picnics, etc.).
- Manage and train F&B service and kitchen teams to ensure excellent guest service delivery.
- Maintain high standards of hygiene, presentation, and service across all F&B departments.
- Work closely with the Head Chef and Kitchen team on menu development, dietary requirements, and food pairing.
- Ensure efficient stock management: ordering, receiving, issuing, and monthly stock takes of food, beverages, and operational supplies.
- Monitor F&B budget, control costs, and ensure profitability.
- Develop and enforce SOPs for all F&B service areas.
- Handle guest complaints in a professional and proactive manner.
- Conduct regular team briefings, performance appraisals, and training to uplift service standards.
- Maintain good supplier relationships and negotiate pricing where necessary.
- Ensure compliance with health and safety regulations and food hygiene standards.
- Prepare and submit monthly operational and financial reports to the General Manager.
Development and Training:
- Identify training needs and implement on-the-job training sessions.
- Mentor junior supervisors and develop career progression plans.
- Stay informed on current F&B trends and innovations suitable for the game reserve environment.
Reporting:
- Monitor daily operations and report on guest feedback, issues, and achievements.
- Submit weekly and monthly operational reports, including stock variances and budget tracking.
- Attend and contribute to management meetings.
Other:
- Be willing to work flexible hours including weekends, holidays, and evening events.
- Ensure smooth coordination between departments, especially kitchen, front office, and housekeeping.
- Perform ad hoc duties or tasks required by Lodge Management for the overall enhancement of guest experience
