Job description

Responsible for the effective day-to-day management of Food & Beverage operations (including restaurants, beverage operations, and food and beverage service in the casino operations), with specific regard to :

  • Achieving profitability in specific outlets
  • Improving standards of operation
  • Facilities and product maintenance and enhancement
  • Ensuring all F&B operational efforts on the casino floor align with the F&B strategy and objectives

Minimum requirements (Education and Experience)

  • 3 Year Hotel School Diploma or equivalent National Qualification at Diploma level
  • 9-10 years in the food and beverage industry, with at least 5 years at a management level

Scope and limits of the job

Manages multiple teams serving guests visiting the business unit. Responsible for preparing and controlling a budget for multiple food, beverage, and conferencing outlets within the unit.

  • Ability to work shifts that meet operational requirements
  • Mobility and ability to move around as per job requirements (including with aids)
  • Physically able to move operating equipment
  • Open to performing similar functions in alternative outlets due to operational needs

Duties and responsibilities include:

F&B Strategic Planning

  • Understand and align with the Group F&B strategy
  • Develop strategic objectives for the unit’s F&B deliverables
  • Facilitate project management and milestone achievement of F&B deliverables
  • Analyze and benchmark F&B products against leading trends
  • Identify and explore new F&B opportunities for the property
  • Conduct risk analyses regarding short-term profit margins and long-term sustainability
  • Delegation of authority and accountability at all levels
  • Communicate with internal and external stakeholders
  • Manage resources and marketing plans
  • Align strategies with transformation targets (EE, SD, procurement, BBBEE)
  • Set revenue targets and develop business action plans and promotions
  • Leverage supplier relationships for promotional activities

Product Development

  • Conduct competitor analysis including pricing
  • Analyze product performance and identify gaps
  • Recommend product rationalization and enhancements
  • Budget and oversee project implementation
  • Measure ROI and share successes

F&B Standards & Governance

  • Oversee standards and processes at the unit level
  • Integrate group standards and ensure legislative compliance
  • Implement control measures to mitigate financial risks
  • Conduct regular compliance walkabouts
  • Promote waste management and collaborate with internal departments to address risks

People Management and Development

  • Lead and motivate staff, promote positive relationships
  • Ensure effective communication and employee engagement
  • Identify training and development needs
  • Recruit and build talent pipeline
  • Manage performance and employee relations
  • Oversee Capex, cost management, and recipe accuracy

F&B Promotions & Marketing

  • Coordinate with marketing for promotions and events
  • Develop promotional collateral and analyze promotional ROI

Reporting

  • Consolidate financial reports, track salary costs, absenteeism, productivity, and sales targets

Customer Relationship Management

  • Develop customer value propositions, handle escalations, and engage with VIP guests

Stakeholder Relationship Management

  • Participate in meetings, communicate objectives and standards, and provide operational feedback

Planning

  • Plan activities to meet business targets and optimize customer spending

Decision Making

  • Apply business acumen, monitor environment, and make informed decisions

Problem Solving

  • Address operational issues, improve systems, and resolve customer complaints
