Responsible for the effective day-to-day management of Food & Beverage operations (including restaurants, beverage operations, and food and beverage service in the casino operations), with specific regard to :
- Achieving profitability in specific outlets
- Improving standards of operation
- Facilities and product maintenance and enhancement
- Ensuring all F&B operational efforts on the casino floor align with the F&B strategy and objectives
Minimum requirements (Education and Experience)
- 3 Year Hotel School Diploma or equivalent National Qualification at Diploma level
- 9-10 years in the food and beverage industry, with at least 5 years at a management level
Scope and limits of the job
Manages multiple teams serving guests visiting the business unit. Responsible for preparing and controlling a budget for multiple food, beverage, and conferencing outlets within the unit.

Duties and responsibilities include:
F&B Strategic Planning
- Understand and align with the Group F&B strategy
- Develop strategic objectives for the unit’s F&B deliverables
- Facilitate project management and milestone achievement of F&B deliverables
- Analyze and benchmark F&B products against leading trends
- Identify and explore new F&B opportunities for the property
- Conduct risk analyses regarding short-term profit margins and long-term sustainability
- Delegation of authority and accountability at all levels
- Communicate with internal and external stakeholders
- Manage resources and marketing plans
- Align strategies with transformation targets (EE, SD, procurement, BBBEE)
- Set revenue targets and develop business action plans and promotions
