Job summary

HotelJobs is seeking an experienced Executive Chef to lead the culinary operations of a luxury safari camp in the Serengeti, Tanzania. The role requires delivering exceptional dining experiences in a remote, high-volume kitchen and managing a large team to maintain consistency across service levels.

The successful candidate will have proven leadership in hotel and lodge settings, strong financial acumen for food costing and budgeting, and a hands-on, solutions-driven approach to drive production

Qualifications

• Proven experience as an Executive Chef, Head Chef or senior culinary leader.
• Strong experience in hotel and luxury lodge operations.
• Demonstrated ability to manage high-volume kitchens, catering for large guest numbers.
• Experience opening, establishing or improving kitchen operations is advantageous.
• Excellent leadership, team development and communication skills.
• Strong financial acumen, including food costing, budgeting and stock management.
• Thorough knowledge of food safety, hygiene and kitchen procedures.
• Ability to work effectively in a remote environment with demanding operational requirements.
• Hands-on, adaptable and solutions-driven approach.
• Experience in fast-paced, high-volume hospitality environments is beneficial.

Responsibilities

• Oversee kitchen operations and maintain high standards of food quality, presentation and service.
• Develop menus reflecting luxury hospitality standards while catering to diverse dietary needs.
• Lead, train and motivate the kitchen team.
• Plan and coordinate food preparation for high guest volumes.
• Establish SOPs and production schedules for efficiency.
• Manage food costs, stock control, purchasing and supplier relations.
