Job description

The Senior Chef de Partie (CDP) at La Residence's Terrace Room works alongside the Sous Chef to manage the dining experience in the busy, interactive hotel kitchen servicing our Villas.

The Senior CDP assists in maintaining the highest standards and consistent quality in daily food preparation, staying updated with new products, recipes, and techniques.

This role aligns with The Royal Portfolio's purpose: "to give our guests a complete experience and a perfect stay."

Duties & Responsibilities
  1. Takes care of daily food preparation and duties assigned by superiors to meet the restaurant's standards and quality.
  2. Ensures that food production, preparation, and presentation are of the highest quality at all times.
  3. Estimates daily production needs and checks the quality of raw and fresh products to meet standards.
  4. Prepares, cooks, and presents high-quality dishes within the specialty section.
  5. Assists the Sous Chef in maintaining menu standards, recipes, and dish development.
  6. Prepares mise en place and coordinates this for meal periods with Commis Chefs.
  7. Assists in managing health & safety and food hygiene practices.
  8. Manages and trains Commis Chefs.
  9. Monitors portion control and waste management.
  10. Oversees kitchen maintenance.
Requirements & Qualifications
  1. At least 2 years' experience as a CDP in a 5-star hotel kitchen.
  2. Tertiary qualification in Culinary Arts with a minimum of 3 years certification.
  3. Creative and confident in running a section, preparing, cooking, and presenting high-quality dishes.
  4. Strong team player with a positive attitude.
  5. Leadership and management skills for junior team members.
  6. Excellent written and verbal communication skills.
  7. Ability to multitask with strong time management.
  8. High attention to detail and numeracy skills.
  9. Enthusiastic about developing personal and team skills.
  10. Adaptable to change and open to new ideas and processes.
  11. Ability to work independently.
  12. Reliable, diligent, and dedicated.
  13. Flexible to work nights, weekends, and holidays.
  14. Preference for candidates residing in Franschhoek or nearby areas.
  15. South African citizenship is advantageous.
  16. Valid work permit required if not a South African ID holder.
  17. Pre-employment polygraph test is mandatory.
