Job description

Looking for a Sushi Chef to work alongside the Head Chef to manage food stock and handle a wide range of ingredients, with attention to detail to fulfill quality standards. To be successful in this role, you should have experience with Japanese cuisine.

Ultimately, you will help us establish our reputation as one of the best Japanese restaurants in the area.

Responsibilities:
  1. Creating & preparing a rich sushi menu with various main ingredients and raw fish (for example, salmon, tuna, unagi).
  2. Prepare appetizers, soups, and salads that align with the philosophy of Japanese cuisine.
  3. Manage and lead the kitchen staff in the head chef's absence.
  4. Coordinate with wait staff to ensure proper cooking, considering special requests and food allergies.
  5. Provide guidance & training to junior kitchen staff, including line cooking, food preparation, and dish plating.
  6. Supervise all food preparation and presentation to ensure quality and restaurant standards.
  7. Oversee and organize kitchen stock and ingredients, including proper dating and quality assurance.
  8. Improve waste reduction and manage budgetary concerns.
  9. Work with the head chef to maintain kitchen organization, staff ability, and training opportunities.
  10. Monitor and maintain hygiene and health and safety principles.
Requirements:
  • Matric, Culinary Diploma preferred.
  • 4 years of previous experience in a senior chef role.
  • Work experience as a Sushi Chef or at an Asian restaurant.
  • Good knowledge of various sushi types and sushi-rolling techniques.
  • Own transport with a valid driver's license.
  • Ability to work both fast and accurately.
  • Leadership and management skills.
  • Able to work in a team.
  • Basic computer skills (Word, Excel, Outlook).
  • Exceptional customer-service skills.
  • Availability to work within opening hours.
