Food Technology and Quality Manager
Our client seeks a Food Technology and Quality Manager to join their team in Cape Town.
Responsibilities
- Maintaining brand integrity and product safety while performing risk mitigation.
- Contributing to category strategy, ensuring innovative and safe products of consistent quality.
- Developing high-quality products using cutting-edge technical innovation that adhere to brand values of quality, freshness, innovation, inspiration, food safety, and value.
- Managing and monitoring the technical team to meet technical strategy, product plan, and category strategy.
- Technical communication and liaison with the buying team, suppliers, quality team, and production teams.
- Influencing supply chain aspects to optimize quality and food safety.
- Leading factory and product process audits within production facilities and supply base.
- Formulating and managing product specifications, ensuring accuracy.
- Ensuring effective product accept/reject criteria.
- Identifying and managing critical control points (CCPs) within production facilities and ensuring suppliers manage their CCPs correctly.
- Overseeing end-to-end quality management systems within farm production facilities and among external suppliers.
- Providing technical input into category, quality management, and supplier strategies, and ensuring their effective implementation.
- Overseeing packaging development, ensuring conformance to legislation.
- Ensuring accurate nutritional information, date marking, and coding.
- Managing allergen control within production facilities and among suppliers.
- Supplier approval and sourcing based on hygiene compliance and risk management.
- Shelf-life assessment and implementation.
- Managing microbiological testing, including test types, frequency, and acceptance/rejection criteria for products and environment.
- Improving production efficiencies within facilities and the supply base.
- Raw material sourcing and approval, ensuring specifications and allergen practices are in place.
- Troubleshooting customer complaints and performing root cause analysis.
- Upholding international standards for food manufacturing and processing, utilizing advanced equipment and technology.
Qualifications & Experience
- BS in Food Science or BTech in Food Technology with 10-15 years of industry experience.
- Relevant retail experience.
- Understanding of high- and low-risk food processing and cross-contamination management.
- Knowledge of cold chain management and critical control points.
- Practical experience in food preparation stages and processes.
- Knowledge of HACCP, GMP, root cause analysis, supply chain, raw materials, allergen management, microbiology, and Listeria management.
- Proven industry experience across various food products.
- Technical knowledge of product characteristics, sourcing, manufacturing, and quality/safety parameters.
- Knowledge of packaging functionality and environmental management and sustainability practices.
