Job summary

Job description

Responsibilities
  • Responsible for all aspects of meal preparation, clean-up, and general upkeep of the kitchen.
  • Attend and give updates at weekly staff meetings.
  • Report acts of maltreatment, neglect, or violations of company policies immediately to the Unit Manager.
  • Organize, clean, and receive all food storage areas, ensuring proper rotation of ingredients to prevent waste and compliance with health and safety regulations.
  • Calculate menus to maximize gross profit and actively increase the unit's profitability.
  • Train staff for portion control and presentation of dishes.
  • Order stocks to meet quality, quantity, and budget requirements.
  • Control hygiene and supervise kitchen cleaning.
  • Maintain the chef's office, including filing, typing memos, issuing orders on Mymarket, and food costing.
  • Engage in production planning.

Qualifications
  • Minimum 8 years of varied kitchen experience including food prep, line cooking, fry cooking, and expediter roles.
  • Senior Certificate / Grade 12 and a relevant tertiary qualification (Associate Culinary Degree/Diploma or recognized in-service training).
  • At least 3 years of management experience.
  • Previous kitchen manager or chef background is required.
  • Ability to do full menu costing (tec books).
  • Computer literacy is essential.
  • Valid driver's license is required.
