Job Description

We are looking for a Canteen Contract Manager based in Pretoria or nearby areas.

The candidate must have a strong knowledge of food and kitchen management procedures.

The candidate must also have a diverse knowledge of the preparation of standard menus daily.

The candidate must also possess ample administrative knowledge and experience in running a canteen site.

Qualifications and Experience

  1. Qualification in Culinary Arts (Diploma).
  2. 5+ years' Site Management experience working in a corporate canteen or similar roles.
  3. Bold and decisive managerial skills.
  4. At least 4 years' experience in daily mass catering (at least 100 people) maintaining quality.
  5. SHEQ experience and qualifications will be an added advantage.

Duties and Responsibilities

  1. Manage stock and placing orders for the same.
  2. Weekly reporting of inventory management, site related development issues and growth.
  3. Organizing, leading, motivating the staff and identifying the needs of the staff.
  4. Assisting with ad-hoc food service requirements as and when the need arises.
  5. Plan staff shifts and rosters.
  6. Maintaining food costing records.
  7. Ensuring portion control is adhered to daily.
  8. Drafting and preparing weekly menus in conjunction with the chef according to the requirements of the site.
  9. Drafting and preparing daily menus for special catering functions and ensuring adherence in preparation.
  10. Ensure compliance with the contract by monitoring the daily conduct of the staff, the company and the client and preparing recommendations of the same.
  11. Ensure health and safety regulations and site related compliance are strictly observed.
  12. Monitor the quality of the products and service provided.
  13. Keep financial and administrative records.
  14. Recruit and train staff.
  15. Forge strategic partnerships and relationships with clients, the Supervisor on site and suppliers.
  16. Ensure compliance with all fire, food regulations, health and safety, and employment regulations.
  17. Ensuring thorough implementation of the company's operational and food safety procedures.
