Job summary

SIGNAL HILL PRODUCTS is seeking a Brewing Operator to produce wort, manage milling and yeast processes, and oversee CIP and related quality controls. You will ensure sanitation, accurate record-keeping, and timely analyses while supporting continuous improvement across the brewing operations.

Prior CIP knowledge and a passion for beer are highly valued. You will work in a production environment requiring attention to detail, teamwork, and flexibility to work after hours or weekends as needed.

Qualifications

  • Matric or equivalent; science/engineering/food science background advantageous.
  • Forklift license required or advantageous.
  • Experience in a production environment with CIP, and knowledge of food safety standards.

Responsibilities

  • Produce wort and manage milling operations.
  • Oversee yeast management and CIP responsibilities.
  • Maintain sanitation and cleanliness of the brewhouse and laboratory areas.
  • Maintain accurate records and analyses; deliver timely results.
  • Identify process improvements and establish monthly KPIs.
  • Support other production areas as needed.

Overall Responsibility

The Brewing Operator is responsible for producing wort, monitoring raw materials, and overseeing milling operators.

Focus Area 1: Maintain a Safe, Healthy and Risk-Free Working Environment
  • Adhere to SHP Safety, Health and Environment (SHE) standards in all daily activities.
  • Participate in safety observations, follow established safety processes, and report or elevate identified gaps.
  • Implement and maintain 5S standards in the designated work area, ensuring workplace organisation and discipline. Always adhere to safe working practices.
  • Follow all Standard Operating Procedures (SOPs), risk assessments, and safe work instructions.
  • Conduct pre-task safety checks before starting equipment or processes.
  • Perform Food Safety and Quality-related activities as part of the Food Safety Management System (FSMS) and Quality Control (QC) functions.
  • Apply basic hygiene and sanitation practices and adhere to food safety-related rules and activities in accordance with factory instructions.
  • Assist with housekeeping activities.
Focus Area 2: Manufacturing Excellence Culture
  • Consistently follow Manufacturing Excellence (ME) pillar tools and standardised work processes.
  • Adhere to structured shift handover requirements to ensure operational continuity and accurate information transfer.
  • Maintain the Operator Workstation concept throughout the shift.
  • Perform assigned Autonomous Maintenance tasks in accordance with established standards.
  • Take responsibility for basic equipment condition, inspection, cleaning, and lubrication activities.
  • Report equipment abnormalities and support the restoration of equipment to basic conditions.
  • Support a culture of continuous improvement.
  • Drive Manufacturing Excellence pillars on the shop floor.
Focus Area 3: Brewing Operations
  • Be responsible for wort production, yeast management, and milling operations, including set-up and CIP responsibilities.
  • Oversee milling staff and ensure that activities are performed according to established procedures.
  • Perform basic analytical laboratory work.
  • Maintain sanitation and cleanliness of the brewhouse.
  • Maintain accurate and detailed records and analyses.
  • Deliver results and analyses in a timely manner.
  • Identify opportunities to innovate and improve processes.
  • Establish schedules and monthly KPIs to maximise the effectiveness of the brewing operation.
  • Perform yeast control and variable analysis where required.
  • Conduct sensory evaluations at all stages of the process.
Focus Area 4: Laboratory, Cellars and Filtration
  • Be comfortable working across these areas, as support and oversight may be required from time to time. Independently perform routine analyses as required for the relevant work areas and to ensure adherence to product specifications.
Minimum Requirements
  • Minimum of Matric or equivalent.
  • A qualification in Science, Engineering, Food Science, or a related field is advantageous.
  • Previous brewing experience is advantageous.
  • Valid forklift driver's license.
  • IBD qualification or certification is advantageous.
  • Experience in a production environment, with knowledge of CIP processes and food safety standards.
  • A passion for beer and brewing.
  • Valid driver's license and own transport.
Skills And Competencies
  • Proficient in Microsoft Excel, Word, and PowerPoint, with strong attention to detailed record-keeping.
  • Ability to work well with others.
  • Ability to work effectively under pressure.
  • Ability to multitask is essential.
  • Willingness to work after hours and on intermittent weekends.
  • Willingness to assist in areas other than brewing within the production unit.
