Job summary

Sartori Cheese is hiring for a WPC Operator to safely operate lactose processing equipment, monitor key parameters, and perform routine sanitation. The role includes cleaning, maintenance, data recording, and training new team members on SOPs and safety protocols.

The position is onsite in Crescent City, CA on a rotating 2-2-3 schedule, with pay range disclosed and HTST certification expected within nine months. Strong attention to detail and teamwork are essential.

Qualifications

• High school diploma or GED preferred.
• 2–3 years of food manufacturing experience desirable; operator experience preferred.

Responsibilities

• Operates whey protein concentrate production equipment, including separators, heat treatment, filtration, evaporators, and bagging systems.
• Monitors flow rates, pressure, temperature, and other critical parameters; records data on production logs.
• Troubleshoots minor mechanical faults and ensures materials are properly staged.
• Performs routine sanitation and cleaning as per SOPs and GMP/HACCP standards.
• Maintains equipment, performs CIP, and manages RO/polisher systems.
• Trains new team members on duties and safety protocols.
• Cross-trains in intake as needed.
