Canteen in Hanover, MD is seeking a Traveling Chef Manager to lead both culinary and food service operations across contracts. This role requires hands-on leadership of menu development, inventory, purchasing, and cost controls while pursuing local sourcing and sustainable practices.

You will drive P&L accountability, mentor kitchen teams, and ensure high-quality service. The position offers growth opportunities within Canteen and a varied, fast-paced environment with partners nationwide.

Qualifications

• Three years of culinary management experience in contract foodservice, fine dining setting, or restaurant with inventory and purchasing knowledge and control.
• Working knowledge of HACCP and food safety standards.
• Experience with cost controls, procurement, and presentation in large-scale operations.

Responsibilities

• Full culinary management of food service operation to include inventory, ordering and receiving.
• Knowledge of P&L accountability and contract-managed service experience is desirable.
• Proficient in menu development, cost controls, purchasing and inventory with a focus on sourcing and utilizing local food products.
• Possesses a passion for sustainability.
