JOB SUMMARY:
Supervises the overall success of the Garde Manger Team Members, upholds the standards and expectations of food quality, freshness, and presentations. Oversees the daily administrative and operational tasks of the Garde Manger Team Members, including financial management and analysis, sanitation, health and safety. Motivates, trains, develops, and directs all team members to accomplish the goals and objectives of the operation to the satisfaction of the guests. Maintains the highest level of culinary standards, providing an exceptional culinary experience for the guest.
EDUCATION:
- High School Diploma or GED equivalent required.
- Two (2) years culinary degree, completed apprenticeship, or equivalent experience required.
- Two (2) years of accredited courses in Business, Marketing, and/or hospitality preferred.
SKILLS:
- Must have strong math skills related to Department industry financials, including writing and achieving budgets. (Test required)
- Platter and Plate presentation test with verbal evaluation. (Test required)
EXPERIENCE:
- Minimum of two (2) years experience as a Garde Manger Chef in a quality high volume Hotel/Casino property, preferably a 4 star property.
- Minimum of five (5) years cooking experience in a high volume quality catering facility on and off premise.
OTHER REQUIREMENTS:
- Must be certified with the National Restaurant Association for ServSafe Food Protection Manager Certification Course, or obtainwithin 1 year of hire.
- Knowledgeable for HAACP – Hazard Analysis Critical Control Point.
- Knowledgeable of Labor laws, Health codes, and Liquor Laws.
- Must posses a Food Handler’s permit, or obtain one within 60 days of hire.
- Must attend training and travel as job function and duties require.
- Must be able to successfully complete either a tribal, state, or federal background investigation.
- Must be able to obtain a Hotel Permit per Regulation 12 with the Tulalip Tribal Gaming Agency.
- Must be available to work any shift, to include days, swing, grave, weekends and / or holidays.
- Must have a successful employment history with the Tulalip Tribes and/or other employment entities.
