Job description

Position Title: Dual Rate Sushi/Teppanyaki Cook

Purpose of Position:

To prepare our sushi menu to properly reflect our program standards. Ensure the highest level of guest satisfaction while minimizing operating costs. Advise the Executive Chef and/or Restaurant manager on all matters relating to the sushi area and or performance of said area. Ensure a high standard of cleanliness and hygienic practice throughout the kitchen. Work with Sushi Chef to balance the cost and quality of sushi menus.

Assist the Sous Chef and Cooks on duty to ensure quality food preparation according to specifications for guests and Team Members. Utilize effective communication and production standards in assigned kitchen area.

Job Responsibilities and Duties:

• Practice proper use, care of tools and sanitation techniques.

• Maintain a clean & organized workstation at all times.

• Contributes to maximizing the overall Food and Beverage departmental profit.

• Responsible for the production, preparation and presentation of all food items to ensure highest quality at all times.

• Establishes and maintains effective Team Member relations and interdepartmental working relationships.

• Participates in the preparation of Sushi menus.

• Responsible for determining and maintaining the minimum and maximum food par stocks.

• Ensures the completion of the market list in accordance with Company quality and quantity standards. Inspects all perishable food items received for quality.

• Attends and contributes to daily and weekly department meetings.

• Stay organized and prepared for any future events and discuss all prep work with the supervisor.

• Responsible for food quality, temperature, portion control, plate presentation, and waste management.

• Responsible for setting up, maintaining their assigned stations according to daily prep sheets, food safety and sanitation standards, and keeping kitchen area free of hazards.

• Monitor and ensure incoming orders are prepared in timely manner in accordance with prep sheets, ServSafe and other regulatory standards.

• Must perform daily inventory of all items specified on prep sheets.

• Responsible for maintaining cleanliness and organization of kitchen area and assigned work stations.

• Portray excellent organizational skills and cleanliness while in view of guests.

• Always wear and maintain a clean chef’s coat while cooking in front of guests.

• Serve Casino guests in a pleasant and efficient manner while maintaining a calm and hospitable demeanor.

• Perform other duties and projects as assigned.

Education/Experience:

• High school diploma or equivalent is required, unless otherwise waived by Human Resources Management.

• Three (3) years of experience in a Sushi preparation role. ServSafe food handlers card required.

• Excellent interpersonal, guest service, communication (verbal and written), analytical, decision-making, inventory control.

• Familiarity of Japanese food and ingredients preferred.
