ZZ's Club is hiring experienced Sushi Cooks to join our team!

A private membership club that originated in Miami, ZZ's Club is an exclusive, modern social space designed for those individuals who appreciate the highest caliber of culinary, hospitality and entertainment.We are a home away from home for our members, a distinguished clientele that expects precise execution and exquisite attention to detail.

RESPONSIBILITIES:

  • Prepare all food products according to the prescribed methods, both during service and prior preparation
  • Follow all internal and state regulations such as DOH/Food & safety/HACCP/Beverage
  • Complete mise en place list in the time allotted, making sure all sections of sushi are ready for each service
  • Acquire recipe knowledge and section setup to smoothly execute service
  • Ensure all items on station are properly stored, labeled and dated
  • Manage inventory levels for a wide range of raw fish and other ingredients
  • Ensure consistent menu execution by using tools such as line checks, menu change SOPs, and recipes
  • Acute attention to detail in the food preparation process, mastering quality control
  • Comply with nutrition and sanitation regulations and safety standards
  • Additional duties as assigned by management

REQUIREMENTS:

  • At least 3 years of experience in high volume and fine dining restaurants.
  • Previous experience in Michelin-starred (1, 2, or 3) and/or NY Times (2 or more stars) is preferred.
  • A Strong knowledge of Japanese Cuisine Experience required
  • This position requires a flexible schedule and weekends are necessary.
  • Have excellent communication and organization skills.
