Job description

Marking the continued expansion of The Del’s culinary experiences, Nobu Del Coronado will be the newest addition to the world-renowned Japanese restaurant empire founded by Nobu Matsuhisa and Robert De Niro.

Nobu Del Coronado will offer over 3,700 square feet of stunning indoor and al fresco oceanfront dining space, including an outdoor covered patio dining with a pagoda bar and dedicated sushi bar. Nobu Del Coronado will also spotlight Nobu-signature dishes including the iconic Black Miso Cod and Yellowtail Jalapeño, as well as Nobu’s world-renowned sushi, plus locally inspired dishes and cocktails.

As a Sushi Cook at Nobu Del Coronado, you will be responsible for the preparation, production, and fabrication of all sushi bar items, including sushi, sashimi, and cold dishes. You will play a crucial role in maintaining the high standards of Nobu’s sushi offerings by ensuring the quality, precision, and presentation of each dish. This position requires advanced knowledge of sushi preparation techniques, attention to detail, and the ability to work efficiently in a fast-paced environment.

Position Summary:

  1. Sushi & Sashimi Preparation: Prepare and serve high-quality sushi and sashimi, ensuring precise slicing, presentation, and the highest standards of taste and freshness. This includes working with a variety of fish, shellfish, and other ingredients as required by the menu.
  2. Cold Dishes Preparation: Prepare cold dishes such as salads, appetizers, and garnishes, ensuring all items are prepared to perfection and presented beautifully. Follow the standard recipes and presentation guidelines provided by the culinary team.
  3. Station Setup & Maintenance: Set up and maintain a clean, organized sushi station before and during service, ensuring all necessary tools, ingredients, and equipment are in place. Keep the station well-stocked, clean, and organized throughout the shift.
  4. Quality Control & Presentation: Ensure all sushi and sashimi are made with the utmost attention to detail and are presented according to Nobu's standards. Monitor the quality and freshness of all ingredients, ensuring that only the finest fish and produce are used.
  5. Plating & Garnishing: Plate sushi, sashimi, and cold dishes to an exceptional standard, ensuring consistency and visual appeal with each dish.
  6. Communication & Collaboration: Work closely with the rest of the kitchen team, including sushi chefs, line cooks, and front-of-house staff, to ensure smooth operations and efficient service. Maintain clear communication with team members and provide support as needed.
  7. Food Storage & Handling: Properly store and handle all raw ingredients and prepared sushi items in accordance with food safety guidelines. Follow proper storage methods to ensure freshness and prevent contamination.
  8. Health & Safety Compliance: Adhere to all food safety, sanitation, and health regulations. Maintain a clean and hygienic work environment at all times, following proper food handling procedures.
  9. Guest Experience: Contribute to the overall guest dining experience by providing high-quality, delicious, and beautifully presented sushi and cold dishes. Ensure timely delivery of orders with attention to detail and guest satisfaction.
  10. Performance During Service: Maintain focus and composure during busy service hours, delivering consistently high-quality food, meeting customer expectations, and adhering to timing standards.
