Job summary

The Madison Club in La Quinta, CA is seeking a Sushi Assistant to support the Sushi Chef in crafting fresh fish dishes and ensuring quality and consistency for members and guests. You will be part of creating the Discovery Land Company experience for our members and fellow employees.

This role requires culinary training and sushi experience in a high-end setting, with emphasis on safety, presentation, and teamwork.

Qualifications

• Culinary degree or certificate preferred.
• At least two years of culinary experience in high-end sushi restaurants.
• Extensive knowledge of sushi preparation.
• Complete knowledge of cookery techniques and processes.
• CA Food Handlers Card (FHC) – obtain certification within 7 days of hire.
• Thorough understanding of health and safety issues.

Responsibilities

• Assist with member/guest issues in a professional manner.
• Ensure items are of the highest quality in presentation and taste.
• Prepare for regular spot checks for menu accuracy and taste.
• Understand and maintain sushi menu standards for consistency.
• Communicate inventory and preparation needs to minimize waste.
• Complete cleaning schedules and temperature records daily.
• Ensure safe use of utensils and train staff accordingly.
• Report non-usable products to the Stewarding Supervisor and maintain par levels.
• Maintain a clean and safe work environment by following safety standards.
• Assist with new menu ideas based on trends and member requests.

Sushi Assistant

The Sushi Assistant is responsible for crafting amazing fresh fish dishes for our guests and assisting the Sushi Chef with preparation to ensure quality and consistency. In this role, you will be part of creating the Discovery Land Company experience for our members and fellow employees.

Key Responsibilities

• Assist with any member or guest issues/concerns in a professional and courteous manner.
• Ensure the items prepared are always of the highest quality possible, both in presentation and taste;
• Prepare for regular spot checks for menu accuracy and taste in all areas.
• Understand and maintain sushi menu standards for exception and consistent service.
• Anticipate daily business levels and communicate needs for inventory and preparations for service to minimize any spoiled or contaminated products.
• Complete all cleaning schedules, temperature records, opening/closing checklists daily.
• Ensures that spoiled or damaged serving utensils are not in use, i.e., cracked/chipped China, glassware, and trains staff to do the same.
• Notifies any non-usable products to the Stewarding Supervisor to record as breakage and ensures that par levels of equipment are kept up to date.
• Champion a clean and safe work environment by ensuring all safety, health, and food handling standards are followed.
• Recommend or present new menu items to the Sushi Chef utilizing research on new or local products, trends, and member requests which deliver on financial target and quality expectations.
• Understand the quality and quantity of the ingredients, suggest modifications or other ingredients to be used.
• Attend department meetings and trainings as necessary.
• Any other duties as assigned.

• Thorough understanding of all occupational health and safety issues.

• Positive attitude, professional demeanor, and exceptional communication and interpersonal skills to deliver service to members, guests, and team members.
• Must be able to work flexible work hours/schedule including evenings, weekends, and holidays.
• Long hours may be required due to business demands.
• Ability to work in a team environment.
• Ability to stay calm and focused during the busiest of times.
• Ability to read, write, speak, and understand English; additional languages preferred.
• Ability to meet the physical demands of the position including, but not limited to, working indoors and outdoors in all weather conditions, standing, walking, and moving for periods of greater than eight (8) hours, and lifting and carrying items sometimes greater than fifty (50) pounds.

Work-Family Culture

The Company’s good faith estimate of the hourly rate it expects to pay for this role is $23-$28 and is based on applicable and specialized experience and location.
