Job Description
The Specialty Cook is responsible for providing superior service to both internal and external customers. This role involves preparing foods listed on the menu that are grilled, fried, broiled, or prepared in the pantry.

  1. The Specialty Cook must familiarize themselves with all company outlets and be able to answer general questions about the property.
  2. Anticipate guest needs and respond promptly with a sense of urgency when working with the public.
  3. Read food orders from computer printouts and prepare food according to established menu plans.
  4. Prepare all food items following standard recipes to ensure consistency.
  5. Wash, slice, peel, and cut foods in preparation for cooking or serving.
  6. Test foods for doneness using tasting, smelling, or piercing methods.
  7. Adhere to work procedures, quality standards, and menu specifications.
  8. Engage with guests in an open kitchen, explaining products, asking questions, and building relationships.
  9. Coordinate and communicate orders with dining room staff.
  10. Prepare food items accurately and timely.
  11. Complete all prep work as indicated on prep sheets.
  12. Maintain cleanliness and safety of all work areas and equipment.
  13. Follow health regulations regarding food handling, storage, and cleanliness, and be knowledgeable about MSDS protocols.
  14. Attend all scheduled training programs.
  15. Complete opening, closing, and other side duties as assigned.
  16. Maintain communication with Lead Cooks and Sous Chefs.
  17. Pass all required tests and training to stay effective in the role.
  18. Maintain a neat, groomed appearance.
  19. Work harmoniously with coworkers and in accordance with SOPs to ensure consistency.
  20. Perform any additional duties assigned by management.

Qualifications
(Related education and experience may be interchangeable on a year-for-year basis)

  • Minimum of 2 years’ experience in a similar role.
  • Ability to read and understand recipes and measurements.
  • Proven ability to prepare a variety of foods in a high-volume, fast-paced environment.
  • Knowledge of sanitation procedures.
  • Possession of, and ability to obtain, a valid driver’s and gaming license as required.
  • Successful background check and drug screening.
  • Ability to pass culinary tasting assessments.
  • Must be at least 18 years old.
