Job Description

Ensure all food is served according to specifications and collaborate with all line cooks.

Responsibilities
  1. Prepare all items on the prep list following standard procedures or instructions from the supervisor.
  2. Maintain high quality at all times by inspecting all food products for quality during preparation and service.
  3. Check portion control, weights, and counts prior to functions.
  4. Cook all food for service and line presentation.
  5. Monitor and maintain correct cooking times and temperatures.
  6. Properly use a rice cooker.
  7. Specialize in high-end sushi preparation.
  8. Ensure product identity and proper butchery of sushi-grade fish.
  9. Follow storage procedures for all food items taken from or returned to the walk-in cooler.
  10. Keep work areas clean and up to health and safety standards.
  11. Prepare food following recipes and standards, ensuring consistency and quality.
  12. Label, date, and rotate perishables according to Omni Hotel standards.
  13. Manage inventory, noting shortages and preparing necessary ingredients.
  14. Return unused food items to proper storage, covering and dating as required.
  15. Collaborate with team members to meet special meal requirements or prepare for events.
  16. Perform other related duties as assigned.
Qualifications
  • Experience in upscale sushi bar preparation for at least 1 year.
  • Knowledge of sushi preparation, including butchery of sushi-grade fish.
  • State of Florida food safety certification required.
  • Basic math skills for recipe and measurement accuracy.
Physical Requirements
  • Good hand-eye coordination and manual dexterity.
  • Ability to lift up to 70 lbs and perform prolonged standing, bending, and pushing.
Working Environment
  • Indoor hotel restaurant and kitchen environment with exposure to humidity, steam, and temperature extremes.
  • Handling of hazardous cleaning chemicals and exposure to food items.
Tools & Equipment
  • Kitchen utensils, pots, pans, slicer, knives, ovens, grills, and other culinary equipment.
